Frugal Fridays With Jen- $3 Frittata

Eggs, even organic eggs, can be a great and cheap source of protein. I've never made a fritatta before- it has a fancy European sounding name that immediately makes me think it must require a special cooking technique. Really- it doesn't!

This recipe has only 5 ingredients. I used 4 whole organic eggs and marked-down portobello mushrooms. I ended up putting it in a pie pan to broil it, as I don't have an oven-proof skillet. It tasted great! The total was under $3 and fed myself and my husband.
