Feats of Balance and Skill

Last weekend, our family went to Santa Monica to soak in the sights including the many street performers. We saw an amazing demonstration of balance and focus done by a man who kicked a bowl off his foot and caught it on his head, six times in a row.











He finished his act by tossing and catching a teapot filled with water.


This artist's skillful feats remind me of how much practice it must have taken to achieve this level of mastery. I wonder how many times he failed, dropped the bowls, lost his balance, and yet he continued to practice to perfect his movements. I was not only entertained, but also inspired, by how he made something look so easy, when it is actually quite difficult.

Motivation Monday - Memorial Day

Freedom Is Not Free

I know most of you will be busy with picnics, parties, and BBQs this weekend. Memorial Day weekend tends to be a "celebration," a kick off to summertime, but please don't forget to honor the real meaning of Memorial Day. Take time to remember all of those who have died in service for our freedom. Say a sincere thank you to everyone you know who has served or is currently serving in our military, and thank their family members too!

R and R Tip #51: Re-purpose your purpose.


It is important to remember why we are living on this earth. What are our priorities: our family and friends or getting that extra bonus by working 100 hours a week? Which really and truly makes us happier?

We live in such a frantic paced world! The world is not frantic; we are! We are the ones who choose to run around at the fast pace. Do we think we are ever going to make up for lost time? The world keeps turning at the same speed. We all have the same twenty-four hours in a day and it is how we choose to use those hours that causes us to be so busy that we don't take time for the simple things in life.

Making your day the best day ever starts with staying focused in the present moment.
By doing less, but focusing on the important stuff, you’ll be less stressed out. If you cut your list down and do only half the things you want to do for today, you’ll have a much better day.

If you get something important done, something that will help you in the long run, even if it’s only a step towards a major accomplishment, it’s important, you will feel great! You’ll feel a sense of accomplishment. That makes any day a great day.

It feels amazing to start taking action on making your life the way you want it to be. Go
for a walk. That movement, and the fresh outdoor air, will have a great effect on your day. And even better: take a few minutes to enjoy the nature around you as you go for your walk. Clear your head. Calm yourself during a busy time of your day. Think to yourself: How lucky I am to be alive!

If there’s someone in your life that you value, make time out of your day today to spend time with them and not just to watch TV, but to actually be with them, talk with them, bond with them. It works.

That is what my R and R Sundays are all about. Making your life full of purpose and living the life you love! Focus on relishing the moments that have been given you to relax, and enjoy them as the gift that they are. By being less stressed, well rested and full of energy for the days ahead we'll all be the very best we can be.

12 HOUR SALAD FOR THE UNSEASONABLY WARM DAYS

I know it's been unseasonably hot here and I have been craving salads - A LOT!  I just don't always have the energy to make a big salad with all the chopping.  That's the beauty of this salad.  It's ready when you walk in the door.  I like to make it on Sunday night and it's perfect for that back to work Monday meal!
12 HOUR SALAD
1 cup slivered carrots
1 tomato chopped
4 cups torn salad greens
1/2 cup chopped celery
2 bunches green onions, sliced
1 can LeSeur peas, drained
1/2 cup mayonnaise
1/2 cup sour cream
1 1/2 tablespoon sugar
1 cup shredded cheddar
1/4 pound bacon, cooked & crumbled
  • Put tomatoes on the bottom.
  • Layer carrots, salad greens, chopped celery, sliced green onions, and LeSeur peas in a salad bowl on top of tomatoes.*
  • Whip together the mayonnaise, sour cream, and sugar and spread over vegetable layer.
  • Sprinkle cheese and bacon over the mayonnaise layer.
  • Cover and refrigerate over night.
  • Toss just before serving.
*Add whatever vegetables you like, radishes, green peppers, etc...
NOTE: When adding cucumber or tomato be sure to place UNDER the lettuce!

Frugal Fridays With Jen- Grilled Pineapple

Whole Pineapple was recently on sale for $1.99 each. I don't typically like pineapple, but my son does, and I am willing to try something again.

I found a recipe for Grilled Pineapple that has been coated with a honey/lemon/pepper mixture. I know- pepper on a pineapple? Sounds revolting! I assure you, it isn't. We peeled, cored, and cut the pineapple outside so we could just spray the driveway down if the juices got all over the place, and our 3 year old loved that chore. We cut the pineapple into quarters and threw them on the grill after brushing them with the mixture. This was a filling side dish and we had enough left over for lunches for 2 days. That's 3 people, 3 servings each.

Pineapple has been on sale frequently these past few weeks, and I can get more for $0.79 each, and I plan on getting 2 or 3. This makes an easy, healthy, frugal treat!

Season's Bounty - Tomato, Basil, and Buffalo Mozzarella Salad

Happy Wednesday, and today I wanted to share the Season's Bounty with a simple, delicious, fresh, and healthy recipe for Tomato, Herb, and Mozzarella salad.

Ingredients -
1 large ripe heirloom beefsteak style tomato, diced
1/4 cup basil, minced
1 - 2 tablespoons fresh oregano minced
1 cup of drained, diced fresh buffalo mozzarella (approximately one large ball)
1 to 2 tablespoons of balsamic vinegar
2 tablespoons of extra virgin olive oil
fresh ground pepper and kosher salt

Mix all ingredients thoroughly in a glass or ceramic bowl. Add fresh ground pepper and kosher salt to taste. Serve immediately.



It's a wonderful appetizer and healthy snack too. Buon Appetito! Prego!

Tuesdays With Kris: Grill Time!

Sorry for the late post. Things have been a little hectic in my corner of the universe.

Long Summer Weekends are right around the corner!
I can't wait for the grilling to begin!




Whole Living has some great tips! I'll break it down for you:



Keep It Simple

When choosing veggies and fruits in season, you don't need complicated marinades and spices to overpower the foods natural delicious taste! Keep it simple, and even raw. Raw corn, at it's finest is a real treat.


Be Patient

Resist the urge to flip meats and vegetables too much. You want to get those gorgeous, and flavorful, grill marks!

Get Seconds

You can ask your farmer's market for seconds, which means slightly bruised fruits and veggies that didn't make it to the market display. If you are making a pie, soup or jam. These poor babies may prove to be more flavorful for their over ripeness when cooked!


Season Lightly

Going back to keeping it simple, less is more in the spice department. A little balsamic for meat, a little lemon for fish. Salt, pepper... DONE!


Don't Get Burned

Place chunkier vegetables (corn, pepper) on the coolest part of the grill, upper rack, or far corner where the flame is less direct. They will cook more evenly. After being charred, you can always perk things up with lemon juice, red-wine vinegar, or balsamic.

Clean the Grill

Always clean the grill with a wire brush after grilling. The next meal will taste better!

Motivation Monday - Keeping Healthy Eating Simple

As I was making my favorite healthy and super simple salad to take to work for lunches this week I decided to share it here for Motivation Monday. Eating healthy doesn't have to take a lot of time or effort, and it definitely doesn't have to be expensive.


This is simply Boston lettuce topped with a combination of chick peas (drained and rinsed), edamame, and dried cranberries. I use a splash of plain balsamic vinegar as a dressing.

This salad has zero saturated fat - no matter what anyone says I'm a huge believer that it's saturated fat that makes us fat not sugar or carbs. It's packed with protein, very healthy and with the combination of all the different flavors, colors and textures it's like a party on a plate! It's so delicious. I hope you'll give it a try.

R AND R TIP # 50: Relax and enjoy those peaceful moments

Peaceful moments in our lives are like precious rare jewels that need to be appreciated, remembered and cherished.

I read a story about a Sufi master who once set himself up at a crossroads. He lit a very bright lamp and a distance away, a candle. Then he sat by the candle and read his book. People watching him were confused. Why didn't he read by the bright light? The bright lamp, he explained, attracted all the moths, leaving him to read in peace! In the world we live in today we are like the moth attracted to the bright light. There are many distractions and so many things to do.

Often we're trying to keep up, the pace is hectic and we often miss out on the quiet and peaceful moments that pass us by. These quiet moments are represented by the candle in our story. They may not make the headlines or be the brightest of lights but it is often a good place to be

Pull out your calendar and mark some time off, just for you. Do it, even if it’s only 30-minutes every few days. Consider this time an investment in your emotional health and wellness. Enjoy it without guilt, no ifs, ands or buts. This is time to give back to yourself!

If you want your life to be something other than it is right now, your only true option is change.
Listen and remember. Those beautiful intimate moments of peace will softly and gently lead you to a more satisfying, fulfilling, joyful and purposeful life.

IT'S SATURDAY GITTING TIME AGAIN

I'm back, but under the weather and haven't finished this week's piece, so let's G.I.T. one more time!

Frugal Fridays With Jen- Craigslist Deals

Pictured above is my 3 month old daughter modeling the Bumbo seat I found on Craigslist two years ago for a mere $15. It came in the original box and was in mint condition.

I've had a lot of success on Craigslist: an $80 headboard, a $120 patio set with new umbrella, a Little Tykes toolbench for $20, a $20 tricycle, and wool cloth diaper covers for less than 25% the original price.

A few suggestions:

Meet somewhere public, if possible. I do most of my exchanges in the parking lot of a nearby grocery store. When I was hunting for a patio set, I took my husband with me. Never go to a stranger's house alone. Even if you are meeting someone in a parking lot, be sure it is daytime, you have a cell phone on you, and someone knows where you are going.

Have a clear idea about what you need and if you really need it- this will cut down on senseless buying.

Research the normal price of an item before you start searching. Not everything on Craigslist is priced well. I usually have a price that I will not go over.

Be prepared to negotiate a lower price. I've been able to talk people down most of the time.

When you are responding to an ad, calling is a faster route than emailing. I've gotten most of my deals when I could call and get my foot in the door.

Bring cash.

Don't be afraid to decline an item that does not match its description or looks more worse for wear than expected.

People who are moving are more likely to have things for sale they have to get rid of fast and can't keep around. You may be able to negotiate a much lower price than usual.

If you live in an area with major bedbug problems like I do, don't buy a used couch or mattress from someone unless you know them well. The creepy little crawlies may be hiding in the furniture, even if it looks nice.

We have just a bit of rug to cover them… As we stack and secure them together, we can leave the existing holes showing and attach cat toys to them… Or cut the holes larger so they have places to crawl in and out…

Son3 has finished his Diorama on Heat Wave by Helen Ketteman… His favorite part was when the corn field got so hot that the corn started popping into popcorn… and the cows were so hot that they made butter… so the family filled up the truck with buttered flavor popcorn and sold it at the Drive In movie…

Essential Oils in the Home

I love using essential oils and other natural aromatherapeutics to help our home smell fresh without the cost and irritation of some fragrances.


Here is a picture of some of my household helpers including fresh lemons and lemon essential oil. The smell of lemons is stimulating, and a few drops of lemon oil in your sink, trash can, and garbage disposal can keep your kitchen smelling clean, even on fried fish night. Well, maybe not completely, but it will be a BIG Help. (Orange essential oil can also be used with equally great results.)

Another essential oil is Lavender, which can be used in the bath or laundry. It is soothing and calming as a fragrance and a natural moisturizer for the skin. You can add a few drops to your favorite lotion too.

Rose oil is also a sensory treat for the skin, when used in the bath or mixed with body oil or lotion.

Tea tree oil is a natural antiseptic that doesn't impair healing of new skin. It can be used to cleanse wounds without burning and reduce the redness of acne outbreaks. I also use it to disinfect tweezers and bandage scissors being sure to wipe the tools dry afterwards.

During the winter months, when I don't have time to bake, but I crave coziness, I will put a few whole cloves and a cinnamon stick into a pan of simmering water. It makes the whole house smell delightful.

And of course, fresh flowers from the garden brighten up any room with their color and lovely smell too.

I am so excited to buy tons of pints of blueberries after reading this article!

Benefits of Blueberries

Bioactive compounds found in berries, especially blueberries, are shown to lower blood pressure and prevent hypertension, according to a study published in the American Journal of Clinical Nutrition.
The team of scientists followed nearly 200,000 people over a period of 14 years, assessing their intake of flavonoids from a variety of natural foods including apples, orange juice, blueberries, and strawberries. They found that the group consuming the highest amount of anthocyanins (found mainly in blueberries and strawberries in the U.S.) were 8% less likely to develop hypertension.
A more in-depth analysis showed that consumption of blueberries in particular conveyed the highest degree of protection against developing high blood pressure with a 10% lower incidence for those eating the fruit once a week.

Blueberry Vinaigrette
 

Eating healthy doesn’t get any easier or more delicious than this! Spruce up your spring salads with this refreshing dressing. Drizzle it over a bed of fresh greens sprinkled with tomatoes, walnuts, and whole blueberries for a truly tasty treat. Prepare the dressing right before serving or blend in extra liquid to make it easier to pour.
Ingredients:
1/2 cup fresh blueberries
1 Tbs. apple juice
2 Tbs. red or white wine vinegar
2 Tbs. soy yogurt* (try WholeSoy -- see product)
1 tsp. shallots, coarsely chopped
1/8 tsp. salt
1 pinch stevia, agave nectar, or other sweetener
freshly ground black pepper (to taste)
* If you choose not to use soy yogurt, you can use additional apple juice instead.

Directions:
  1. Puree all ingredients in a blender until relatively smooth.
  2. Drizzle over salad and serve immediately.

Motivation Monday - Emergency Preparedness

This past weekend we had a direct lightning strike at our home. It was the weirdest thing and scary besides. When it hit, the whole house went a blinding blue for a second. I know for just a fleeting moment we all thought we were done for!

We were without power for almost 12 hours. The experience made me realize how complacent I've become about storm warnings and how unprepared I really am.

Living in Florida severe thunderstorms are so common that we get to where we disregard the warnings. None of us thought a thing about having TV on, being on our computers, and the boys on their video games while the thunder and lightning crashed all around us. We were very lucky that nobody was hurt when it hit our home.

Please be sure to heed any weather warnings - better safe than sorry. I know we will play by the rules during any future storms.

When I think of emergency preparedness I usually think of the big things that I would need in the case of a serious emergency situation. For us here in Florida that would usually be a hurricane. I make sure at this time of year I start stocking up on things such as nonperishable food, a huge stock of bottled water, batteries, flashlights, having an waterproof evacuation bin ready to go, etc.

What I almost never think about are the little things that just make things more comfortable and more safe in the even of a minor problem like we experienced this past weekend. On my shopping list will be better quality candles and even better I'm on the lookout for battery powered lights and fans. Having the candles is a dangerous situation with 3 kitties roaming the house. We had to make sure we didn't leave them unattended for even a second. Also the heat got almost unbearable, battery powered fans would have been a most welcome addition - if such a thing exists. We also realized that we foolishly no longer own a battery powered radio, that's a must!

There are two big things that I don't have that I really should - a generator and a weather radio. I can't believe with as prone as we are to hurricanes and major storms that I've never purchased either one. I'm definitely going to price those items as well.

Let my experience motivate you to think about all different aspects of emergency preparedness, and to get moving to make sure you are ready!

R AND R TIP #49: RELAX and enjoy your SPECIAL place

Years ago, success was determined by where you lived and what you drove. Now it seems that success is measured differently by how busy you are.

During the course of your week, you may place on your head any of the following hats: wife, mother, worker, daughter, sister, aunt, grandma, cook and bottle washer, chauffeur, nurse, maid, counselor, referee, PTA member, committee chair. If so, it may be time to do a little hat reduction, ridding our schedules of some of the activities that clamor for our attention

Sometimes these hats are stacked so high that trying to balance them all on our pretty little heads sends us toppling completely over.

You are special and you do have a SPECIAL place in the world. It is so very important to give yourself the gift of rest and relaxation so that you can be the very best that you can be no matter what hat you are wearing!

Frugal Fridays With Jen- Green Candy

We've been experimenting still with roasting fresh veggies in the oven, and last weekend we saw this recipe for Roasted Broccoli on America's Test Kitchen (you'll need to create a free login to see it).

A head of fresh broccoli was $1.49 last week. We used a twee bit of salt, sugar, and olive oil to roast it. It was delicious! I couldn't stop eating it- it got nicely browned and caramelized. I paired it with a fettuccine made with free pasta, $0.50 Philly Cooking Cream, and $0.10 worth of chicken broth. The whole meal was less than $2.50. I'd say the broccoli would serve 4 people easily. Thursdays With Linda: Around The House

My posting plan this week was hopefully to tell you that hubby got a Job… As he was scheduled for a second interview this week… However there was an illness, the interview was cancelled and so a call will be coming today to reschedule the interview…

In the meanwhile I will share what we have been doing around the house this week…

Son1 and Son2 have put up the last side of the fence around the front yard… Son1’s Mother Day present to me…

We are probably going to leave this side open as we have sections in the lawn that the city needs to get to sometimes… Although Son1 suggested a gate door style of Saloon swinging doors…

Son1 and his friend leveled out the area next to the driveway from where hubby removed all the rocks and pavers that had become a dangerous tripping walkway…

And they are now preparing it to be cemented…

The kittens are so curious, playful and getting into everything… So I looked online for a Cat Tree of some sort… They run to the upwards of $300…

So a leftover roll of carpet, some boxes and cat toys…

And TaDa! They Love It! In, Over, Under, Around… Running, Leaping and Wrestling…

I’ve also raged war on the gnats that have been in the house for the last couple of years… I did some research online and…

Step One~Stop over watering the plants… So the most infested plants have been outside for a few days drying out…

Step Two~Water plants lightly with a bit of dish soap added to the water…

I have a spray bottle that I use to spritz the kittens when they get into the plants so now I will also be battling gnats too…

Step Three~Cut up a raw potatoe and place wedges into the dirt to attract the babies that are born… I’m kind of Ew on this part as you have to dicard the wedges every couple of days with the babies in them, so I will see if the soap and dryer dirt will do the trick first…

And Just sharing my manicure that Son1’s Girlfriend did for me for Mother’s Day…
