We've been experimenting still with roasting fresh veggies in the oven, and last weekend we saw this recipe for Roasted Broccoli on America's Test Kitchen (you'll need to create a free login to see it).

A head of fresh broccoli was $1.49 last week. We used a twee bit of salt, sugar, and olive oil to roast it. It was delicious! I couldn't stop eating it- it got nicely browned and caramelized. I paired it with a fettuccine made with free pasta, $0.50 Philly Cooking Cream, and $0.10 worth of chicken broth. The whole meal was less than $2.50. I'd say the broccoli would serve 4 people easily.
