Tuesdays With Kris: Heirloom Tomato Salad

Heirloom tomatoes are in season now, and since Fairway came to the Upper East Side I've been a bit obsessed. Here's a great salad for summer.


Heirloom and Beet Salad with Goat Cheese
(serves 5)

4 cups chopped Heirloom tomatoes
(not sure how many because it depends on the size)
4 small beets, cubed
1 cup chopped basil
2 oz goat cheese

the dressing
2 tablespoon olive oil
4 tablespoon red wine vinegar
salt and pepper

Mix all vegetables and basil separately from dressing. Whisk dressing in a bowl and pour over chopped vegetables. Sprinkled basil and goat cheese on top. Salt and pepper to taste.
