Belgian Endive and Pear Salad with Maple Candied Pecans: the first recipe I've tried from my new book, The Veganomicon. It's a collection of recipes that are all vegan, meaning my dairy-allergic child can safely eat anything prepared from it. This looks like cole slaw with nuts in it, but it is actually a little sweet, and made from belgian endive, thinly sliced pears, a twee bit of olive oil and balsamic vinegar, plus pecans I quickly toasted in a skillet and candied with some maple syrup. So good! Total cost was under $4, and half the ingredients were organic. Simple cheese and crackers or a glass of milk or soy milk can increase the protein amount without significantly increasing cost. A winner all around!
